Chilled Borscht

Yields1 Serving

 16 oz Darista Dips Roasted Beet Hummus (2 containers)
 1 lb potatoes, diced
 1 cup carrots, diced
 1 cup beets, shredded
 ½ head of cabbage, thinly sliced
 4 cups vegetable broth

Whisk together the hummus and broth, pour into a stock pot and add the potatoes and carrots. Cook for 15 minutes, add the cabbage. Continue cooking until potatoes are soft. Add salt and pepper to taste. Chill in refrigerator until very cold (or, if desired, serve warm!) Serve with sour cream and fresh dill.
