Dice half an onion and sauté in oil until translucent. Stir in one can of drained, cubed jackfruit and one 8-oz. container Darista Dips Roasted “Red Pepper” hummus. Ad ½ cup water and cook until jackfruit is falling apart, about 15 minutes (add more water if needed). Serve on corn tortillas with queso fresco, avocado and shredded lettuce.
