Short Rib Sandwiches with Darista Pimento Cheese Dip

For the Darista Pimento Cheese Dip
 8 oz cream cheese
 ¼ cup mayonnaise
 8 oz Darista Dips Roasted “Red Pepper" Hummus
 1 cup white cheddar cheese, shredded
 1 cup sharp cheddar cheese, shredded
 4 oz jar chopped pimentos
 salt, to taste
 hot sauce (optional)
For the Sandwich
 pulled short rib
 pickled jalapenos
 arugula
 baguette

In a food processor, KitchenAid with whisk attachment, or using hand-held beaters, whip the softened cream cheese until fluffy. On low speed, fold in the mayonnaise, followed by the Red Pepper Hummus until fully incorporated. Fold in the shredded cheeses and pimentos. Season with salt. Garnish with chive and smoked paprika.

For the sandwiches, spread Pimento Cheese Spread on a sandwich with pulled short rib, pickled jalapenos and arugula.
